Nourishing Simple Carrot Salad


2 carrots, grated
1 shallot, finely chopped
2 celery sticks, finely sliced
2 tablespoons deep fried shallots
1 -2 tablespoons balsamic vinegar (to taste)
2 tablespoons extra virgin olive oil
2 tablespoons sesame seeds
1 handful of chopped cashews
salt & pepper to taste


Mix all together and serve!

Add grated beetroot, and/or any herbs available finely chopped (experiment to discover your favourite!)
