Simple Vegetarian Lasagne

This is an easy vegetarian lasagne that gives you all the flavour with none of the hassle. I made it up one evening to use up the various ingredients I found on hand and discovered a very tasty meal that took a lot less time than usual to make because you don’t have to cook a bechamel sauce separately, but instead just mix together some difference cheeses.

Ingredients

8 lasagne sheets (store-bought in the box is totally fine)

1 tbsp butter

Splash of extra virgin olive oil

1 small jar of vegetable pasta sauce (or make your own passata)

4 spring onions/shallots, thinly sliced right down to the white roots

1/2 red capsicum/pepper, diced

1 large bunch English spinach, roots trimmed off

Optional: any other veges floating around just chop and add to the sauce

250ml ricotta cheese

200ml grated cheddar

pinch of dried oregano (or fresh if you have it)

salt and pepper

 

Method

Grease the bottom of a lasagne dish with the butter and lay out the first few lasagne sheets as closely togetheras possible or slighly overlapping. Try to fit them so they reach the edges of the dish.

Preheat oven to 200 degrees celsius (or 180 fan).

Heat the oil in a small saucepan and saute (lightly fry) the shallots over a medium heat being careful not to burn them. Add the capsicum and any other veges and stir occasionally till softened. Then mix in the red sauce and combine. Turn off heat.

Steam the English spinach till wilted, squeeze out all the water then chop and add to the vege sauce mixture. Mix till combined.

Mix the two cheeses, herbs and seasoning together in a bowl. You can lightly heat them in a microwave to help combine but this is optional.

Layer the vege sauce over the pasta in the dish, then add a layer of cheese. Repeat pasta, sauce, cheese layers and finish with cheese on top.

Cover with foil and cook for 10 minutes on the middle shelf of the oven. Remove foil and cook for another 15 or so or until the top begins to brown.

Serves 4-6 people.
